Headcanon: Deadly Nadders' Spines
The Deadly Nadder's spines grow continually (much like hair, fingernails, or a rodent's teeth) and very quickly. This means the dragon actually needs to expend them, or become weighed down, reduced in balance and manueverability (as we can safely assume the tail significantly helps with those), and risk poisoning itself by an overgrown spine's point becoming embedded farther down.

Okay. So firstly, "Canon" is what's accepted as part of a fictional world. In the Dragons universe, "Canon" means HTTYD/2/3, (possibly to a lesser extent) RoB/DoB/RTTE/the shorts (excluding LotBKD, which has been declared non-canon... which also makes BoD non-canon, as it mentions the events of LotBKD), and (depending on who you ask) the graphic novels and TNR.

A "Headcanon" is basically an idea or thought that you would like to believe is Canon, I.E. a real part of the fictional world. Does that make sense?

Oh, and another term you may run across is "Fanon", which is basically a Headcanon that has become very widely accepted across the fanbase.

Headcanon: Scentmarks
Dragons make extensive use of scentmarks, and lick their riders as a means of claiming them.
