As for the characterization, I can completely see Valhallarama doing the exact same thing that Valka did. After all, did not Valhallarama do exactly the same thing in the books? (For details, the spoiler below) As far as Hiccup's and Stoick's reactions go, I really thinking they're avoiding mentions of their tough questions. Of the two, I think that Hiccup could eventually rationalize living with dragons. After all, was he not planning to run off with Toothless after being chosen to kill Hookfang? That being said: In the Dragon Sanctuary clip, I think there is a significant cut. Hiccup seems to be both angry and confused by Valka in his first line... but, after a short shot of Valka's face, he makes a somewhat less than impressive statement following that. I think they cut a bit of dialogue out of there, especially considering Toothless is less than trusting for the first line, but is completely satisfied that Hiccup is safe for Hiccup's second line. As for Stoick, he thought that his wife is dead for twenty years. He'll be overjoyed to have her back. And, if we take a few cues from the books, he'd understand what his wife was doing, especially considering (a) he knows Drago and (b) he is protective of the dragons now.
