Honestly I tihnk that it will be in there for a little bit of comedy relief, and I guess to show off just how smart Valka is (i.e. Make us go 'Wooowww How'd she know that?')

Honestly considering Toothless's biggest prowess is speed and maneuverability in flight at that speed. If the spines do anything I'd say it would be that. Although I'm no expert when it comes to flight mechanics or aerodynamics. So what they might exactly do is above me someone with more experience in those fields would have to say.
As far as I can tell all the extra spikes will do is add Drag (bad) by the increasing surface area. But I honestly don't know much about animals flight mechanics (I only know about aircraft and I highly doubt that that Dragons would need fins to maintain straight and level), so I may be wrong, they may actually be useful.

They're obviously thermoregulatory devices to prevent Toothless from overheating when rapidly firing consecutive plasma bolts. ¯\_(ツ)_/¯

It is conjecture, since I do not possess a night fury upon which to conduct vivisection experiments.

I would caution Hiccup about lying in prose position upon Toothless's dorsal side. Should Toothless inadvertently snap shut the the dorsal plates, Hiccup will no longer be able to sire heirs.

I don't really like them either, they're kind of strange looking and really random. Why would pressing a certain spot on his lower spine make them pop out? what is their function? I don't get it. Maybe it will make more sense in the movie but... we'll see.

But I don't remember seeing them in any other shot of toothless in the trailer, so unless every single other shot happens before that scene (I doubt it considering some of it looked like climactic stuff) then surely they would have to be retractable in some way? Very weird feature if so.

(this is lilgerndt from berks grapevine)

I actually don't think its a bad idea.. I mean spikes are generally a defensive mechanism (like a stegosaurous.) so maybe in some way it is just armor or a defensive thing? The dinosaurs didn't have any reasons for having them except to display their aggression and use them defensively.. But I actually thought it was cool. Needless to say the thought after that was "Oh no people onpleased on berks grapevine won't be happy." XD As I thought back to the argument the toy brought. XD

That being said although it's "weird" that she pressed something and they popped out, I still don't think its a bad idea. And it likely wasn't a button but a nerve that she pressed or something, since dragons don't have buttons. I guess its kinda like a cat having retractable claws but no one ever knowing about it. Hidden, yet can come out when needed.

It is! Dinosaurs like Stegosaurus had plates on their back not for defense but actually to regulate temperature! Scientists found that veins run through the plates so they would have probably have been used for thermo-regulating. But their plates were much larger and could not 'flap'. This is still unlikely because Toothless's spikes are too small to support any kind of thermo-regulation veins or some other. A theory I have is that the spikes are only on male Night Furies and are used to show off during mating displays. Only a theory.

I just thought that when Valka touches Toothless on the back, and all the those spikes popped out, could this could be something important in the plot. Maybe Valka has already seen another night fury?
I think that they have some purpose in the plot of the show and will be of use somehow. I don't really think Valka encountered a night fury prior but that from being around dragons so long she like saw some sign or something and knew what to do

I think they look weird though..............especially when Toothless started flapping them

what if you fly'..."
