I have a few: I may just as well mention one from each part of the franchise. Probably easiest.

HTTYD 1:
'A dragon will always... Always... Go for the kill.'
Which just goes so well with both instances of the line,
'So why didn't you?'

Don't really have a favourite quote from Boneknapper...

Gift of the Night Fury:
'That year, I gave my best friend a pretty great gift. But he gave me a better one!'



From the series, I have three:
Gem of a Different Colour:
'Stay dragon! I am now your master!'
And then the body language in that cheesy thumbs-up sells the entire thing.
Finally, Two from When Lightning Strikes:
'Until we've worked out why Thor was angry at the metal, we're walking on eggshells.'
'I don't know. I guess she couldn't find it, because she kept showing up from the opposite direction.'

HTTYD 2:
'Oh... well... crazy thing is, I'm actually the one who shot him down. Hey, it's okay, though! He got me back! Right, bud? You couldn't save all of me, could you? You just had to make it even! So... peg leg!'

If I had to choose, it would probably be the HTTYD 1 one. But other than that, I can't really decide!

GOTNF:

Astrid: The eggs explode?

*Dragon eggs start to hatch*

Astrid: THE EGGS EXPLODE!!!

LOTBK:

Hiccup: Gobber, take off your pants!

TV show S01:

Hiccup: It's like Toothless is jealous. Which id great, so, my first girlfriend is a dragon.

TV Show S02:

Hiccup: What is this guy, like, the king of armadas? Does he go anywhere without one?

HTTYD2:

Astrid: That's your mother?!

Hiccup: Now you know where I get my dramatic flair!

There are A LOT more but these are the ones I personally love the most.
