No, I wouldn't think so. Despite the way America phrased things in that recent interview clip, the official site makes it clear that they've been an "item" for some time now, but it doesn't seem that the wedding is already planned or anything.. Stoick is just making assumptions (although they aren't really unreasonable) with the daughter-in-law comment.
Come death. Come suffering. I will not live in fear. In this fleeting life where time escapes us, the path of least resistance is a slow quiet death. I'd rather burn out than fade away.

I (hope) doubt that there is any engagement in the movie, though they will most likely be married at the end of HTTYD3
